This is a quick and easy pasta sauce that tastes of summer…
Ingredients:
1 medium onion
1 medium carrot
3 stalks of celery
1 tin of tomatoes
½ tsp of vegetable stock
Salt and pepper
Method:
1. Cut the onion, carrot and celery into small pieces and sauté.
2. Add the rest of the ingredients and simmer for around10 minutes.
3. Blend to a smooth sauce in a blender (if you don’t have a blender, you can use a hand blender or push the sauce through a sieve).
Serve with pasta and garnish with basil. Sprinkle with grated cheese if desired.
