Ingredients:
6oz red lentils
1 medium onion
¾ pint of vegetable stock
1 or 2 cloves of garlic
1 tsp ground cumin
1 tsp ground coriander
salt and pepper
Method:
1. Chop and sautee onion and garlic with the spices until soft
2. Add washed lentils and stock
3. Boil for 10 minutes, then simmer for 10 more (add more water if necessary)
4. Season to taste
5. Serve with rice, naan etc
You can also include other spices such as turmeric or cinnamon.
